One of the easiest things for people to start making at home is truffles. These can be made using very simple equipment that you will probably already have in your kitchen.

1) In a saucepan, heat the cream, glucose and butter to 75-80C
2) Pour cream mixture over the bowl of chopped chocolate and leave for 30 seconds
3) Using a stick blender, combine together the chocolate and cream until it forms a shiny thickened emulsion
4) Either leave in the bowl or place into a tupperware box and leave in a cool place overnight to set up
5) Use a teaspoon to scoop out 1/2 a teaspoon of the ganache and roll into a ball - a little larger than a marble
6) Now your truffles can be dipped in tempered chocolate and rolled in cocoa dusting (cocoa powder and icing sugar)

360g milk chocolate (35-40% cocoa mass)

190ml longlife whipping cream

50g liquid glucose

60g butter

Drops of essence to flavour if desired
